Turkey Enchilada Casserole INGREDIENTS: 2 cups diced cooked turkey 1/4 cup chopped onion 1/8 cup (optional) celery 1 clove garlic (minced) 3 Tbsp butter 1 can (4 oz) diced green chilies or 1/4 cup minced fresh green peppers 1/2 tsp dried oregano leaves 3 Tbsp all-purpose flour 2 cups chicken or turkey broth 1/4 cup plain yogurt 8-12 corn tortillas 1 1/2 cups cottage cheese 1/2 cup Monterey Jack and/or Mild Cheddar 1 can (4 oz)sliced black olives, drained 8 stalks of cilantro diced (optional) PREPARATION: Saute onion, garlic, chilies (if using fresh) and celery (optional) in butter. Stir in turkey and oregano. Heat thoroughly. Add broth & stir in flour. Cook until slightly thickened. Add plain yogurt & chilies (if using canned) & olives. Heat for 10 minutes stirring often. Add cottage cheese, mix well and turn off stove. Add tortillas while you tear them in small pieces & add diced cilantro (optional). Stir. Then pour mixure into baking dish and top with Monterey or Cheddar and bake for 20 minutes at 350 degrees. | ||||||||||||||||
